Lactose intolerance
Lactose Intolerance means the intolerance to digest lactose, the principal component of sugar contained in the milk. Lactose is a sugar or disaccharide /a complex sugar/ formed by two molecule (glucose and galactose). Our body cannot digest this kind of sugar as it is. It needs a specifi enzyme, different to each saccharide, which can split up this sugar in a simple molecule (monosaccharide).
What is Lactase?
The necessary enzyme needed to digest the lactose is named LACTASE. If the lactase produced in our body is not enough it starts to ferment producing acids and gas.
Diffusion of lactose intollerance
Lactose intolerance is quite spread between half of the world’s population (based on the Lacto intolerant Italian Association data). For this reason in the last few years there is an ever growing demand of more digestable products without (or low containes) of lactose.
